Refreshing Summer Ideas

During the heat of summer (especially here in the heart of California!) no one feels like cooking. My husband tends to cringe when I turn the oven on…”do you really want to heat up the house,” he questions. The truth is, no, no I don’t want to heat up the house. As much as I love food and enjoy cooking, summer time feels like it should be a vacation from all the regular house “duties.” That’s when my craving for cool, fresh flavors gives me an opportunity to mix up Taco Tuesday and Sunday Family dinner. Here are a few of my favorite summer tortilla and tortilla chip ideas.


Tacos with Fresh Fruit Salsa

Take any of your favorite taco recipes and put an easy spin on it with a fresh fruit salsa. There are so many out there to choose from: Peach Salsa, Mango Salsa, Watermelon Salsa. Take your pick. Our corn tortillas complement any salsa. Adding the fresh fruit will “cool” down your tacos and add a whole new level of flavor. These kinds of salsas are so tasty, your mouth will water just thinking about it. The best part? If you make extra salsa you can snack on it later with any one of our delicious tortilla chips. My favorite taco with fruit? Easy chicken tacos with mango salsa. Simply yummy.

A Cool Wrap

One thing I know for sure about summer is that cold food tastes good! This Waldorf Chicken Wrap is no exception. The creamy filling has fresh fruit and can be made the day before so that all you have to do is warm up your tortilla of choice and wrap it up!



Shrimp Tacos

Sauteing shrimp is one of my favorite things to do when I’m in need of an easy but (somewhat) fancy meal. It cooks up so quick and you can add any flavor twist to it that you can think of. For the summer I make shrimp tacos with a coleslaw that is cool and packed with flavor. Add a squeeze of lemon or lime to the top and you can easily eat four of these at a time! Choose any of our white or yellow corn tortillas for these tacos. I personally like to add sliced avocado on my shrimp tacos...but you do you!


Healthy, Fresh, and Easy

Start with the salsa recipe and add a grain of your choice for a hearty wrap.

The next dish I rely on for a healthy, fresh summer meal is the brain work of a dear family friend. She brought this dish to a party once as a side to scoop up with tortilla chips. I was hooked with the first bite. The mixture of deep salsa flavor and a touch of lime is one you’ll thank me for later. I love it so much that I now serve it in a flour tortilla, burrito or wrap style, with a slight char from a grill pan. If you really want decadence add some shredded cheese to the outside of your tortilla before grilling it. This creates a crispy cheese crust without much additional work.
