Tacos with Mango Salsa

Beat the summer heat with a refreshing fruit salsa on your favorite taco dish!  

Ingredients

24 La Tapatia or Sol de Oro Corn Tortillas

6 boneless, skinless chicken breast, cubed

Garlic salt, pepper, thyme to taste

Cotija cheese (or your favorite crumbled cheese)

Mango Salsa

2 Mangos, peeled and diced

1 fresh jalapeno, seeded and diced (use only 1/2 for a mild salsa)

6 tablespoons of chopped cilantro

6 tablespoons of chopped red onion

6 tablespoons of lime juice 

Salt and Pepper to taste

 

Directions

Cook your chicken over medium high heat.  Season with garlic salt, pepper, and thyme.  (Use your favorite chicken spices if you prefer).  While chicken is cooking, make your salsa by combining all ingredients in a bowl and chilling until ready to serve.

Warm your tortillas on a comal with a bit of olive oil, fill with chicken and salsa then top with crumbled cheese.  Enjoy!
