Truffle Potato Tacos

Not just potato tacos, but truffle potato tacos! Oh yeah! Doesn't it make you hungry just reading that? Try this traditional dish with a bit of "fancy" by adding truffle salt. Dip the finished tacos is an aioli that kicks up the heat.

Ingredients

1 lb russet potatoes (about 4-5 medium potatoes)
1/2 cup jack cheese
2 teaspoons truffle salt (or to taste)
12 La Tapatia corn tortillas
Oil for frying
Salt and pepper to taste

Directions

Peel, cube, and boil potatoes until cooked through.
Drain potatoes and mash well until smooth. Add cheese, salt, and pepper. Mix well.
Add 1-2 spoonfulls of potato mixture to one side of a tortilla. Set aside and do the same to all your tortillas.
Warm oil in a skillet (enough to cover the bottom).
Place a potato filled tortilla flat into hot oil. After about 20 seconds, fold tortilla over. Fry each side of taco until golden.
Continue with each tortilla...enjoy!

Spicy Cilantro Aioli
Ingredients
1 half bunch of cilantro
1 jalapeno (remove seeds)
2 garlic cloves
1/2 cup of mayonnaise
salt and pepper to taste

Directions
Add all ingredients to a food processor or blender and process until desired consistency.
For a tangy twist, add juice of half a lemon and stir to combine.
Dip your tacos or drizzle aioli over the top and enjoy!
