Summer Smash Tacos
A fusion of tacos & burgers, perfect for a summer bbq.

Ingredients
4 Fajita Tortillas or La Tapatia Corn Tortillas
1 lb ground beef
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped tomato
1/4 cup chopped onion
1/2 cup chopped cilantro
1 cup chopped radish
2 jalapenos chopped/sliced
2 cups shredded jack cheese
1 cup shredded cabbage or lettuce.
Directions
1. Combine ground beef, salt, pepper, and 1/4 cup cilantro in a medium bowl. Set aside.
2. Heat a griddle or flat grill over medium-high heat.
3. Combine tomato, onion, 1/4 cup cilantro, and jalapeno (if using) in a small bowl.
4. Divide beef into 4 meatball size portions and place them on the hot griddle. Lightly press down but do not flatten yet.
5. Cook for 3 minutes.
6. Place a tortilla on top of each beef portion and press down to flatten the beef into the shape and size of the tortilla.
7. Cook until tortilla is golden-brown, and beef is cooked through, about 3 more minutes.
8. Flip each patty over and top with cheese. Allow cheese to melt and tortilla to brown.
9. Remove from the griddle, top with tomato mixture, cabbage, and radish.
10. Fold in half like a taco. Serve immediately.
