Waldorf Chicken Wrap

A perfect combination of flavors and textures to make ahead of time for a refreshing lunch.


Chicken Quesadillas

3 Golden Sun Impact Wraps
1 1/2 cups of cooked, cubed or shredded chicken
1/4 cup reduced fat mayonnaise
1 teaspoon apple cider vinegar
1 tablespoon plain Greek yogurt
1 cup chopped apple and/or 1 cup chopped grapes, halved
1/2 cup chopped celery
2 tablespoons walnuts (if desired)
Salt, pepper, and squeeze of lemon to taste


In a medium bowl combine the mayo, vinegar, an yogurt.
Add remaining ingredients and season with salt, pepper, and lemon. For best flavor allow mixture to sit in refrigerator for at least one hour.
When ready to serve, warm the Impact Wrap on a comal or griddle, spoon Waldorf mixture down the center of Impact Wrap and wrap it up. Repeat for remaining wraps.
