Toasted Party Wrap
This is a quick party dish filled with flavors that will make your taste buds dance. The protein of the black bean and quinoa, combined with the authentic flavor of the Gorditas will leave you satisfied and full of energy.
A tip for an alternative version of this recipe...use Kathy's Party Salsa recipe one day and then add a grain of your choice for a refreshing wrap the next day.
4 to 6 La Tapatia Gorditas or Golden Sun Wraps
1 cup cooked quinoa
1 red bell pepper chopped into bite size pieces
1 bunch of cilantro chopped
1 small white onion chopped
1 can of sweet corn
1 can of black beans (drained & rinsed)
1 lemon or lime juice to taste
Oregano to taste
Salt and Pepper to taste
Add all ingredients from quinoa through black beans to a medium size bowl. Sprinkle oregano, salt, and pepper over the ingredients. Add lemon or lime juice to desired taste. Mix well. Warm tortillas slightly, fill with mix and wrap up. Just before serving, toast your wraps on a hot skillet or grill. Enjoy!
