Easy Chicken Enchiladas

The ultimate make-ahead meal, easy enchiladas, savory chicken can be prepped ahead of time and frozen, simply baked when you're feeding a crowd!


  • ​10 La Tapatia Corn Tortillas

  • 2 Garlic Cloves

  • 2 tbsp Chipotle 

  • 1/2 tsp Cumin 

  • 1 cup of Chicken Broth

  • 1 tsp Vegetable Oil 

  • 2 Cooked Chicken Breast

  • 1 Diced Onion 

  • 1 cup of Diced Tomatoes

  • 1/2 Tomato Sauce

  • 1 cup of Mozzarella Cheese

  • Salt and Pepper to taste


1.  In a saucepan, add oil and saute garlic, add chipotle chiles, cumin, half chicken broth, tomato sauce, salt and pepper. Bring to a boil reduce heat and let simmer, set aside until ready to use.

2.  Preheat oven to 375 degrees.

3.  Heat oil,  saute onion, garlic and tomatoes in a medium saucepan until soft, add chicken, cumin, salt, pepper and remainder of chicken broth and cook for 5 minutes. 

4.  Spray a 13 by 9-inch baking dish with non-stick spray.

5.  Place 1/3 of chicken mixture in each tortilla and roll it. Place on baking dish faced down, top with sauce and cheese. Garnish with cilantro leaves.

6.  Cover and bake in oven for 25 minutes or until cheese is bubbly.

7.  Uncover and bake for 5 additional minutes.

8.  Remove from oven and let sit for 5-10 minutes before serving.
