Creamy Party Nachos

The go to snack at any fiesta, cheesy nachos packed with an explosion of flavors. 


For Nachos

  • 1 bag La Tapatia or Golden Sun tortilla chips

  • 1 batch of Roasted Corn (recipe below)

  • 1 batch of Queso (recipe below)

  • Chopped green onion for garnish

  • Chili powder to taste

For Roasted Corn

  • 1 bag (10.8 oz) frozen sweet corn

  • 1 Tablespoon olive oil

  • ¼ teaspoon salt

  • ½ teaspoon paprika

For Queso

  • 8 oz. pepper jack cheese cut into cubes

  • 8 oz. Monterey jack cheese cut into cubes

  • 8 oz. reduced-fat cream cheese

  • 1 can chopped green chiles

  • ½ cup 2% milk

  • Onion powder

  • Seasoned salt

  • Cotija cheese for garnish


For Roasted Corn

1.  Preheat oven to 400 degrees. 

2.  Line a baking sheet with foil. 

3.  In a medium sized bowl mix all “Roasted Corn” ingredients.  Pour the mixture onto the baking sheet in an even layer.  

4.  Roast for 20 minutes until the corn is golden and crunchy. 

5.  Remove corn from oven and set aside.  Corn may be stored until ready to serve if necessary.


For Queso

6.  Combine all ingredients in a crock pot on low heat for four hours.  Stir occasionally.

*OR For stove top preparation, melt three cheeses in a saute pan over medium heat.  Stir to combine until melted and creamy.  Add milk and green chiles.  Stir to combine.  Let queso heat for 3-5 minutes while stirring occasionally. 


7.  When queso begins to bubble, add onion powder and salt.  Stir and allow it to bubble once again.


For Nachos

8.  Prepare your nachos by layering tortilla chips in a large shallow dish. 

9.  Pour Queso evenly over chips. 

10.  Layer desired amount of corn on top of Queso and garnish with crumbled cotija and green onion sprinkle with chili powder.  Grab a chip and enjoy!
