Chile Verde with Tortillas

A savory dish perfect for a variety of uses.  Serve it as an entrée with beans, rice, and tortillas on the side.  Try it on top of nachos or tostadas for a twist on the traditional meal.  For a “wet” burrito, place your burrito in the center of your plate and pour the Chile Verde over the top.

Ingredients

2 pounds of cubed pork

2-3 garlic cloves

1 Onion

8-10 Tomatillos (green tomatoes)

½ cilantro bunch

1-2 jalapeños

1 lemon (seeds removed)

Cooking Oil or spray (for prepping pan)

Salt, garlic salt, granulated onion, ground cumin, ground oregano (to your liking)

Corn or Flour Tortillas for dipping and scooping

 

Directions

Finely chop up garlic clove and ½ onion. In a large sauce pan, add oil or spray to coat bottom of pan.Cook cubed pork with onion, garlic clove, and all seasonings until cooked through.Allow cubes to crisp slightly in the pan. Set aside. In a separate pot, boil onion, tomatillos, jalapeños, juice of lemon, and the lemon peel.Add salt, garlic salt, a clove of garlic, and granulated onion (to your liking). Once boiled, remove lemon peel. Place boiled mixture in a blender and add cilantro. Blend. Pour the blended mixture back into the pot and add meat mixture. Keep warm until ready to serve.*Tip, the longer you allow the mixture to simmer, the more flavor your sauce will have.  

 

Time: 60 minutes

Serves: 8-10 as an entree

Alternative “Last Minute” Chile Verde

1 bottle of Herdez Tomatillo sauce

2 pounds of cubed pork

Cooking Oil (for prepping pan)

Garlic powder, salt (to your liking)

Corn or Flour Tortillas for dipping and scooping

 

In a large sauce pan, add oil or spray to coat bottom of pan.  Place cubed pork in pan, season with garlic powder and salt as desired.  Continue to cook until pork is cooked through and begins to brown and crisp (carnitas style).  Once pork is cooked, add the bottle of Tomatillo sauce.  Fill the empty bottle with water and pour into the pan.  Mix thoroughly and let simmer until ready to serve.  *Note, this method will alter the color of your sauce slightly as it picks up the flavor of the cooked pork from the pan…but it will be delicious!

Time:  25 minutes

Serves:  8-10 as an entree
